Our Journey...

Eric & Laura Ann Hart entered the restaurant world about 10 years ago with their first fast casual restaurant in Kennesaw Georgia. With the changing landscape in the restauarnt industry since Covid, the Harts decided to close their restaurant and focus on their passion and love of food by bringing amazing "Gourmet Street Eats" directly to the public with their food trucks & catering services. In January of 2022 the Harts converted their restaurant space to a full service catering kitchen so they could expand their menu offerings.

By the end of 2022 The Cheezy Truck, Gaston Street Eats Food Truck and the Catering Division of Gaston Street Eats fed over 60,000 people and serviced 567 private and public events.

Eric has a corporate background in the hospitality industry where he was the director of operations for a mid-size firm in Kennesaw, Georgia for over 25 years.  Eric left corporate America in 2013 to open his first restaurant. Eric specializes in speed of service, menu creation, inventory management, food truck & catering operations, and employee development.

Laura has been an entrepreneur for over 20 years and has a master's degree in positive psychology. Laura's background is in sales and marketing and she has helped over 500+ small business owners with their marketing and advertising needs in the last 12 years.  Laura sits on several community advisory boards and teaches leadership development and a food truck entrepreneur program.
